Introduction of Japanese Kitchen Knives Made in Japan
In this section, I will introduce to you Japanese knives which have been used for over last 280 years, ever since the middle of the Edo period in Japan. Cooking knives are said to have first originated during the Heian period (806), using forging techniques derived from traditional sword making. Currently there are about 450 knife makers in Japan, which we at Sushitrainer are all very familiar with. After testing a large number of them, we have selected the top nine manufacturers and will introduce all of them here.
Since 1995, the industry has experienced an amazing amount of growth, and will continue to grow. I expect many major technological developments by the year 2010. There are still many chefs today who seek high quality blades made with traditional iron forging techniques. The evolution of knives in Japan is amazing, and they only continue to get better. They are already known as the top knives in the world, and have state of the art design. Many chefs are thus attracted to Japanese knives. I will now go ahead and introduce some of these knives.
